Salumificio Santoro is a company that produces traditional salami. They are situated in a wonderful southern Italian town named Cisternino, located in the heart of the “Valle d’Itria”. The “Valle d’Itria” is a hilly countryside in the centre of the region of Puglia, surrounded by the towns of Cisternino, Martina Franca and Locorotondo. Thanks to the ideal climate, this area boasts a long tradition in production of high quality salami.

It is here, during the curing stage, the flavour of the sausages takes shape, due to the winds that blow from the Adriatic and Ionian Sea.

This region is characterised by its famous “trulli”, a type of houses protected by the UNESCO foundation as a World Heritage site. It also holds one of the few places in the world with Macedonian oak forests.

The acorns of the Macedonian oaks were the food preferred by the local pigs that were allowed to walk free in the countryside.
